What he does instead is build atmosphere, which is what a jazz bar, a piano bar, a hotel lobby or a restaurant actually needs. He's upfront about what this isn't. He won't have your guests up on tables. What he does is set a mood and hold it, which is the actual job in a restaurant, a hotel lobby or a piano bar.
On the day
If there's a good grand piano in the building he'll play it. If there isn't, he brings his own keyboard and it's no drama either way. His Bose PA suits smaller rooms, or bigger ones where you want the volume kept down. Beyond a power point he's self contained.
